Ingredients
  

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ¼ cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 tablespoon lemon zest
  • ¼ cup fresh lemon juice
  • 2 cups fresh blueberries

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a 9x9 inch baking dish with parchment paper.
  • In a large mixing bowl, combine 1 ½ cups of flour, 1 cup of sugar, 1 teaspoon of baking powder, and ½ teaspoon of salt. Whisk together until evenly mixed.
  • Add ½ cup of melted butter to the dry ingredients and stir until crumbly.
  • Set aside about one cup of the mixture for later. Press the remaining mixture into the bottom of the baking dish.
  • In a separate bowl, mix the eggs, zest of 1 tablespoon lemon, and ¼ cup lemon juice. Whisk until combined.
  • Gently fold in the fresh blueberries and pour the mixture over the crust in the baking dish.
  • Sprinkle the reserved crumb mixture on top and bake for 30-35 minutes or until the top is golden and the filling is bubbly.
  • Once done, let cool for at least 15 minutes before lifting out with parchment and slicing into squares.

Notes

Use room temperature eggs for better emulsification. Fresh blueberries work best; if using frozen, toss them in flour before adding. Allow bars to cool completely before slicing.
