Ingredients
  

  • 1 ¾ cups graham cracker crumbs
  • 1 cup unsweetened shredded coconut
  • ½ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 1 can (14 ounces) sweetened condensed milk
  • ½ cup fresh lemon juice
  • 2 large eggs
  • 1 tablespoon lemon zest
  • Optional: Whipped cream for topping

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a bowl, combine the graham cracker crumbs, shredded coconut, granulated sugar, and melted butter. Stir until well mixed.
  • Press the crumb mixture into a 9x9 inch baking dish and bake for 10-12 minutes until lightly golden. Allow to cool slightly.
  • In a mixing bowl, whisk together sweetened condensed milk, fresh lemon juice, eggs, and lemon zest until smooth.
  • Pour the filling over the crust and spread evenly.
  • Return to the oven and bake for 20-25 minutes, until set and slightly jiggles in the center.
  • Let cool to room temperature, then refrigerate for at least 2 hours before slicing.

Notes

Use fresh ingredients for the best flavor. They taste better after chilling overnight. Store in an airtight container in the refrigerator for up to one week.
