  • 1 ½ cups all-purpose flour
  • 1 cup sweetened shredded coconut
  • ½ cup unsalted butter, softened
  • 1 cup powdered sugar, plus extra for rolling
  • 2 teaspoons lemon zest
  • 2 tablespoons lemon juice
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a separate bowl, cream the softened butter and powdered sugar together until light and fluffy.
  • Mix in the lemon zest and lemon juice to the butter mixture.
  • Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  • Fold in the shredded coconut until evenly distributed.
  • Scoop the dough and roll into 1-inch balls, placing them on the baking sheet about 2 inches apart.
  • Bake for 12-15 minutes or until the bottoms are lightly golden, then cool slightly before rolling in powdered sugar.

Notes

Use fresh lemons for optimal flavor. Chill dough for 30 minutes for perfectly round cookies. If desired, mix a little lemon zest into the powdered sugar for added flavor.
