  • ¾ cup granulated sugar
  • 2 cups all-purpose flour
  • 1 cup powdered sugar (for glaze)
  • 3 tablespoons lemon juice (freshly squeezed)
  • 1 tablespoon lemon zest
  • ½ teaspoon salt

Instructions
 

  • Preheat your oven to 350°F (175°C). Prepare an 8-inch square baking dish by greasing it lightly or lining it with parchment paper.
  • In a large bowl, cream together the softened unsalted butter and granulated sugar using an electric mixer until fluffy and pale, about 2-3 minutes.
  • Slowly incorporate the all-purpose flour and salt into the butter mixture, mixing until just combined.
  • Press the dough evenly into the prepared baking dish. Bake in the preheated oven for 18-20 minutes or until the edges are lightly golden.
  • While the shortbread cools, prepare the glaze by whisking together powdered sugar, lemon juice, and lemon zest in a medium bowl until smooth and glossy.
