  • 2 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 cup powdered sugar (for glaze)
  • 2-3 tablespoons fresh lemon juice (for glaze)

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy.
  • Beat in the eggs, one at a time, ensuring they are fully incorporated.
  • Stir in the lemon zest and juice into the butter mixture.
  • In another bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
  • Using a cookie scoop or a tablespoon, portion out the dough and roll it into balls. Place them on a parchment-lined baking sheet.
  • Bake for about 10-12 minutes, until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
  • In a small bowl, mix the powdered sugar with fresh lemon juice until smooth.
  • Once the cookies are completely cooled, drizzle the glaze on top.

Notes

Allow cookies to cool completely before storing. Store in an airtight container at room temperature for up to a week. Freeze for longer storage and reheat at 350°F for 5-7 minutes.
