Ingredients

  • 2 1/2 cups all-purpose flour sifted for best texture
  • 1 cup unsalted butter room temperature
  • 1 1/4 cups granulated sugar
  • 2 large eggs room temperature
  • 1 tbsp fresh lemon zest finely grated
  • 2 tbsp fresh lemon juice
  • 2 tsp baking powder
  • 1/2 tsp salt

Optional Add-ins

  • 1 tsp vanilla extract
  • 2 tbsp poppy seeds
  • 1/2 cup white chocolate chips
  • 1/4 cup shredded coconut
  • 1/4 tsp almond extract

Instructions
 

  • Cream butter and sugar – In a large mixing bowl, beat the butter and sugar until light and fluffy.
  • Add wet ingredients – Beat in the eggs, one at a time. Mix in lemon zest and lemon juice until well blended.
  • Combine dry ingredients – In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture, stirring until just combined.
  • Chill the dough – Wrap dough in plastic wrap and refrigerate for 30 minutes to enhance flavor and control spreading.
  • Preheat the oven – Set to 350°F (175°C). Line baking sheets with parchment paper.
  • Shape cookies – Scoop 1-inch balls of dough and place 2 inches apart on baking sheets.
  • Bake – Bake for 9–11 minutes until edges are lightly golden. The centers should look slightly underbaked.
  • Cool – Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
  • Optional glaze – For extra sweetness, drizzle cooled cookies with a glaze made from powdered sugar and lemon juice.

Notes

Do not overmix the dough to keep cookies tender.
Fresh lemon zest makes a big difference in flavor—avoid the bitter white pith.
Dough can be frozen for up to 3 months and baked straight from frozen.
