Ingredients
  

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons lemon zest
  • 1/4 cup lemon juice
  • 1 cup pistachios, chopped

Instructions
 

  • Preheat your oven to 350°F (175°C) and prepare a 9x13-inch baking dish by greasing it with butter or lining it with parchment paper.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
  • Add in the eggs one at a time, mixing well after each addition, then pour in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet mixture, stirring gently until just combined.
  • Fold in the lemon zest, lemon juice, and chopped pistachios.
  • Pour the batter into the prepared baking dish, smoothing the top with a spatula. Bake for 25-30 minutes or until the edges are lightly golden and a toothpick inserted into the center comes out clean.
  • Once baked, remove the bars from the oven and allow them to cool in the pan for about 10-15 minutes, then lift them out using the parchment paper and let cool completely on a wire rack.
  • Once cooled, slice into squares or bars and serve.

Notes

Use room temperature ingredients for easy blending. Add more lemon zest for extra flavor. Let the bars cool completely before slicing to set properly. Toasting the pistachios enhances flavor.
