Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons poppy seeds
  • 2 tablespoons lemon zest
  • 3 tablespoons lemon juice
  • 1 egg
  • 1/2 cup powdered sugar (for dusting)

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, whisk together flour, baking powder, salt, and poppy seeds.
  • In another bowl, cream the softened butter and sugar until light and fluffy.
  • Beat in the egg, lemon juice, and lemon zest until well combined.
  • Gradually add the dry mixture to the wet, stirring until just combined.
  • Scoop the dough and roll into balls, then roll in powdered sugar.
  • Place on a lined baking sheet and bake for about 10-12 minutes.
  • Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Always use fresh lemon juice and zest for best flavor. Refrigerate dough balls for better texture. Use a cookie scoop for uniform sizes. Store in an airtight container for up to a week.
