Ingredients
  

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 3/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamo
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup unsalted butter (melted)
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup powdered sugar (for coating)

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Grease a mini muffin tin lightly with cooking spray or butter.
  • In a large mixing bowl, whisk together the flour, baking powder, sugar, salt, and cinnamon.
  • In another bowl, beat the eggs, then mix in the milk, melted butter, lemon juice, and lemon zest.
  • Pour the wet ingredients into the bowl with the dry ingredients and gently fold together.
  • Using a small cookie scoop or spoon, fill each mini muffin cup about three-quarters full.
  • Bake in the preheated oven for about 10-12 minutes until golden brown.
  • Allow to cool slightly, then roll in powdered sugar before serving.

Notes

Measure flour accurately to avoid dense donut holes. Allow butter to cool before adding, and don’t overmix. For extra lemon flavor, add a glaze.
