- 1 cup unsalted butter, softened
- 1 cup sugar
- 1/2 cup brown sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 tablespoons lemon zest
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- powdered sugar (for dusting, optional)
Preheat your oven to 350°F (175°C).
Line two baking sheets with parchment paper.
In a large mixing bowl, combine the softened unsalted butter, sugar, and brown sugar. Beat until light and fluffy.
Incorporate the egg and vanilla extract and mix until fully combined.
Gently fold the lemon zest into the dough.
In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add to the wet ingredients and mix until just combined.
Using a cookie scoop, drop rounded balls of dough onto prepared baking sheets, leaving space between each.
Bake for 10-12 minutes, until cookies are lightly golden around the edges and soft in the middle.
Transfer cookies to a wire rack to cool completely.
Dust with powdered sugar if desired.
Use room temperature ingredients for better mixing. Allow cookies to cool on a wire rack to prevent them from becoming soggy.
Experiment with other citrus zests for different flavors. Dough can be refrigerated for up to 2 days before baking.
