Ingredients
  

  • 1/4 cup lemon juice (freshly squeezed)
  • 3/4 cup olive oil (extra virgin)
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 clove garlic (minced, optional)
  • 1 tablespoon fresh herbs (like basil or parsley, optional)

Instructions
 

  • Juice the lemons until you have 1/4 cup of fresh lemon juice and remove any seeds.
  • In a bowl, combine the lemon juice with the Dijon mustard and honey or maple syrup. Whisk or shake until blended.
  • Slowly add the olive oil while whisking continuously to emulsify the dressing.
  • Season with salt and pepper to taste. Adjust as needed.
  • If desired, stir in minced garlic and fresh herbs for extra flavor.
  • Taste and adjust seasoning, then transfer to a storage container, sealing tightly.

Notes

Use fresh lemon juice for the best flavor. Store in the fridge for up to two weeks. Shake well before using if separation occurs.
