Ingredients
  

  • 1/2 cup chia seeds
  • 2 cups light coconut milk
  • 1 medium fresh mango, diced
  • 2 tablespoons maple syrup or honey (optional)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions
 

  • In a bowl, whisk together the chia seeds, coconut milk, maple syrup or honey (if using), vanilla extract, and a pinch of salt. Ensure everything is well mixed.
  • Cover the bowl and place it in the refrigerator to chill for at least four hours or overnight.
  • While the chia pudding is setting, peel and dice the mango into small cubes.
  • Once the pudding has thickened, stir it gently and spoon it into serving bowls, layering with fresh mango on top.

Notes

Measure chia seeds carefully to avoid overly thick pudding. Taste the mixture before chilling to adjust sweetness. Prepare a double batch for meal prep. Store in the fridge for up to five days.
