Ingredients
  

  • 1 can (15 ounces) canned chickpeas, drained and rinsed
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 medium red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions
 

  • Open the can of chickpeas, drain them, and rinse under cold water.
  • Dice the cucumber, halve the cherry tomatoes, and finely chop the red onion.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  • In a large mixing bowl, combine the chickpeas, cucumber, cherry tomatoes, red onion, and parsley. Pour the dressing over the salad and toss gently.
  • Add the crumbled feta cheese and fold gently to keep the feta intact.
  • Taste the salad and adjust seasoning as needed. Serve immediately or chill for 30 minutes before serving.

Notes

This salad can be stored in an airtight container in the fridge for up to 4 days. It tastes even better after marinating in the dressing.
