Instructions

  • Prepare your ingredients. Zest and juice the Meyer lemons. Strain the juice to remove seeds and pulp.
  • Whisk the base. In a heat-safe bowl, whisk together the eggs and sugar until smooth and slightly pale.
  • Add lemon and salt. Stir in the lemon juice, zest, and salt until fully combined.
  • Cook the curd. Pour the mixture into a saucepan and cook over low heat, stirring constantly, for 8–10 minutes until thick enough to coat the back of a spoon.
  • Add the butter. Remove from heat. Stir in butter pieces one at a time until melted and glossy.
  • Strain for smoothness. Pour the curd through a fine mesh strainer into a clean bowl.
  • Cool and store. Let it cool for 10 minutes, then transfer to glass jars. Refrigerate for up to 2 weeks.

Substitution Tip: If Meyer lemons are unavailable, combine ¾ regular lemon juice with ¼ orange juice for a similar sweetness.
