Ingredients
  

  • 1 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 3/4 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a mini muffin pan with cupcake liners.
  • In a bowl, whisk together the all-purpose flour, cocoa powder, granulated sugar, baking soda, baking powder, and salt.
  • In another bowl, combine buttermilk, vegetable oil, egg, and vanilla extract. Whisk until fully incorporated.
  • Pour the wet ingredients into the dry mixture and stir gently until just combined.
  • Fill each mini cupcake liner about two-thirds full of batter.
  • Bake for 12-15 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cupcakes cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
  • Frost your cooled mini chocolate cupcakes with your favorite frosting.
