Ingredients
  

  • 2 cups all-purpose flour
  • ¾ cup sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup milk
  • ½ cup unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen mulberries

Instructions
 

  • Preheat your oven to 375°F (190°C). Line a standard muffin tin with paper liners.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, beat the eggs and mix in the milk, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Fold in the mulberries carefully.
  • Distribute the batter into the muffin tin, filling each cup about two-thirds full.
  • Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  • Allow muffins to cool in the pan for 5 minutes before transferring to wire racks.
