Ingredients
  

  • 2 cups ripe mango, diced
  • 1 cup coconut cream
  • ΒΌ cup honey or maple syrup
  • 1 tablespoon gelatin or agar-agar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Fresh mint leaves for garnish

Instructions
 

  • Prepare your mango by peeling and cutting into dice.
  • Puree the mango in a food processor until smooth and set aside.
  • In another bowl, mix the coconut cream, honey or maple syrup, vanilla extract, and a pinch of salt until combined.
  • Dissolve the gelatin in warm water according to package instructions, or dissolve agar-agar in boiling water.
  • Combine the mango puree with the coconut cream mixture, and stir in the dissolved gelatin.
  • Layer the mixture into small cups or jars and refrigerate for at least 2 hours to set.
  • Garnish with fresh mint leaves before serving.

Notes

Choose ripe mangoes for the best flavor. For a vegan version, use agar-agar instead of gelatin and maple syrup instead of honey.
