Ingredients
  

  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 2 cups heavy whipping cream
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 package graham crackers (about 14-16 crackers)

Instructions
 

  • In a large mixing bowl, whip the heavy cream until soft peaks form. Gradually add sugar and vanilla extract, whipping until stiff peaks form.
  • Prepare a baking dish by placing a layer of graham crackers at the bottom.
  • Spread a layer of whipped cream over the graham crackers evenly.
  • Layer fresh strawberries, blueberries, and raspberries over the cream.
  • Repeat the layering process with more graham crackers, whipped cream, and berries until you finish with whipped cream on top.
  • Decorate with remaining berries on top of the whipped cream.
  • Cover with plastic wrap and refrigerate for at least 4 hours to chill and set.
  • When ready to serve, slice the cake into squares.

Notes

Be sure to let the cake chill for at least 4 hours or overnight for best flavor. Use fresh ripe berries for the best taste.
