Ingredients
  

  • 1 cup Oat Milk
  • 1 cup All-purpose Flour
  • 2 tsp Baking Powder
  • 2 tbsp Maple Syrup
  • 1/2 tsp Salt
  • 2 tbsp Coconut Oil (melted)
  • 1 tsp Vanilla Extract
  • 1 Egg (or Flax Egg for vegan option)

Instructions
 

  • In a large bowl, combine the flour, baking powder, and salt. Whisk well to ensure there are no lumps.
  • In another bowl, combine the oat milk, melted coconut oil, maple syrup, vanilla extract, and the egg. Whisk until smooth.
  • Gradually pour the wet ingredients into the dry mixture, folding gently with a spatula.
  • Heat a non-stick skillet over medium heat and add a small amount of coconut oil to prevent sticking.
  • Pour about 1/4 cup of batter for each pancake and cook until bubbles form, about 2-3 minutes.
  • Flip the pancake gently and cook for an additional 1-2 minutes until golden brown.
  • Serve warm with syrup, fruit, or other toppings.

Notes

These pancakes can be made gluten-free by using a gluten-free flour blend. For a vegan option, use a flax egg instead of a regular egg. Batter can be prepared ahead of time and cooked fresh in the morning.
