Ingredients
  

  • 1 cup grated zucchini
  • 1 cup rolled oats
  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamo
  • 1/2 cup chocolate chips (optional)

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine grated zucchini, sugars, butter, egg, and vanilla extract until well mixed.
  • In another bowl, mix rolled oats, flour, baking soda, salt, and cinnamon.
  • Gradually blend dry ingredients into the wet mixture until combined.
  • Fold in chocolate chips if using.
  • Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  • Bake for 15-20 minutes or until edges are golden.
  • Allow cookies to cool on a wire rack before serving.

Notes

Make sure to squeeze out excess moisture from the zucchini before adding it to the dough. n Experiment with adding nuts or dried fruits for added texture.
