Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/4 cup granulated sugar (divided)
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (melted)
  • 1 large egg
  • 1 tsp vanilla extract
  • 8 oz cream cheese (softened)
  • 2 cups peaches (peeled and sliced)
  • 1/2 tsp cinnamo

Instructions
 

  • Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
  • In a mixing bowl, whisk together flour, 1 cup of sugar, baking powder, and salt.
  • Pour in melted butter, egg, and vanilla extract. Stir until it forms a thick dough, reserving 1 cup for topping.
  • Spread the remaining dough evenly in the bottom of the prepared pan, pressing down firmly.
  • In a separate bowl, beat the softened cream cheese with the remaining 1/4 cup of sugar until smooth. Spread over the crust layer.
  • Layer the sliced peaches over the cream cheese mixture.
  • Sprinkle the reserved crumble mixture over the peach layer.
  • Bake for 35-40 minutes until golden brown on top and the center is firm.
  • Allow to cool completely before lifting out and cutting into squares.

Notes

Choose ripe peaches for maximum flavor. Let your cream cheese soften at room temperature for easy mixing. If using frozen peaches, thaw and drain them well. Chill the bars before cutting for better shape.
