  • 3 medium ripe bananas
  • 1 cup peanut butter (creamy or chunky)
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Line a standard muffin tin with cupcake liners.
  • In a large mixing bowl, mash the ripe bananas until smooth.
  • Add the peanut butter, sugar, eggs, milk, and vanilla extract to the mashed bananas and whisk until creamy.
  • In a separate bowl, combine the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, folding gently until just combined.
  • Spoon the batter into each cupcake liner, filling about two-thirds full.
  • Bake for 18-20 minutes, or until a toothpick comes out clean.
  • Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
