  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamo
  • 2 large eggs
  • 1 cup crushed pineapple (drained)
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
  • In a mixing bowl, combine the flour, sugar, baking soda, salt, and cinnamon. Mix well.
  • In another bowl, whisk together the eggs, crushed pineapple, vegetable oil, and vanilla extract.
  • Slowly pour the wet ingredients into the dry mix and stir gently until just combined.
  • Pour the batter into the prepared loaf pan.
  • Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use fresh pineapple if possible for better flavor. Don't overmix the batter to keep the bread tender. You can add nuts or chocolate chips for variations.
