Ingredients
  

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup pistachios, chopped
  • 1 cup white chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the eggs one at a time, followed by the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix this into your wet ingredients.
  • Gently fold in the chopped pistachios and white chocolate chips.
  • Drop heaping tablespoons of dough onto a lined baking sheet, leaving space between each.
  • Bake for 10-12 minutes until the edges are golden and the center is soft.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Always use room temperature butter for better incorporation. Chill the dough for thicker cookies. Use parchment paper for easy removal and even baking.
