Ingredients
  

  • 1 medium zucchini, grated
  • 1/3 cup honey or maple syrup
  • 1/2 cup plain Greek yogurt
  • 2 large eggs
  • 1 cup whole wheat flour
  • 1/2 cup protein powder (vanilla or unflavored)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamo
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped nuts (optional)
  • 1/4 cup dried fruit or chocolate chips (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or spray it with cooking spray.
  • In a large mixing bowl, whisk together the honey or maple syrup, Greek yogurt, eggs, and vanilla extract until smooth and well combined.
  • Gently fold in the grated zucchini until thoroughly mixed.
  • In a separate bowl, combine the whole wheat flour, protein powder, baking powder, baking soda, cinnamon, and salt. Mix well to ensure an even distribution of dry ingredients.
  • Gradually add the dry ingredients to the wet mixture. Stir until just combined; do not overmix. If desired, fold in the chopped nuts and/or dried fruit or chocolate chips at this stage.
  • Evenly distribute the batter into the prepared muffin tin, filling each cup about 2/3 full.
  • Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  • Once done, allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

Prep Ahead: Grate your zucchini the night before and store it in the fridge to save time in the morning. Use a Ripe Banana: For additional sweetness, add mashed ripe banana to the batter for a moist texture and natural sweetness. Adjust the Sweetness: Taste your batter before baking it. You can always adjust sweetness levels according to your preference. Make it Mini: Use a mini muffin tin for bite-sized Protein Zucchini Muffins. Adjust the baking time to about 10-12 minutes. Double the Batch: Make a double batch and freeze half of them. They make fantastic snacks later on! Customize Toppings: Experiment with toppings!
