Ingredients
  

  • 3-4 medium fresh bell peppers (any color)
  • 1 cup white vinegar
  • 1 cup water
  • 2 tablespoons sugar
  • 1 tablespoon salt
  • 2 garlic cloves, smashed
  • 1 teaspoon black peppercorns
  • Optional spices (like oregano or red pepper flakes) to taste

Instructions
 

  • Wash the peppers thoroughly and slice them into rings or strips.
  • In a medium saucepan, combine the white vinegar, water, sugar, salt, smashed garlic, and black peppercorns. Bring to a gentle boil, stirring until the sugar and salt dissolve.
  • Remove from heat and let the brine cool for a few minutes.
  • Place sliced peppers in a clean, sterilized jar, and add any optional spices.
  • Pour the hot brine over the peppers, ensuring they are submerged, and leave a little room at the top of the jar.
  • Seal the jar tightly with a lid and allow to cool to room temperature before transferring to the fridge.
  • Let the peppers sit for at least one hour before enjoying, with best flavor if marinated overnight.

Notes

Use fresh peppers for the best flavor and crunch. Allowing the peppers to marinate in the fridge enhances their flavor. Experiment with different pepper types and spices.
