Ingredients
  

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (melted)
  • 1 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 1 cup fresh raspberries (coarsely chopped)

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Line an 8x8 inch baking pan with parchment paper and grease the exposed surface.
  • In a medium bowl, mix the flour, baking powder, and salt.
  • In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition.
  • Stir in vanilla extract and lemon zest.
  • Gradually mix the dry ingredients into the wet mixture until just combined.
  • Fold in the fresh raspberries gently.
  • Pour the batter into the prepared dish and smooth the top.
  • Bake for 25 to 30 minutes or until golden brown and a toothpick comes out mostly clean.
  • Allow to cool for 10 minutes, then lift out using parchment paper and cool completely on a wire rack before slicing.

Notes

Make sure to measure your flour accurately. Use room temperature eggs for better incorporation. For the best flavor, use fresh raspberries.
