Preheat your oven to 350°F (175°C).
Grease a 9x5-inch loaf pan with butter or cooking spray.
In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. Whisk until well blended.
In another bowl, whisk together eggs, vegetable oil, and vanilla extract until smooth.
Gradually add the wet mixture to the dry ingredients, stirring gently until just combined.
Fold in the chopped rhubarb until evenly distributed.
Transfer the batter into the prepared loaf pan and smooth the top.
Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
Remove from oven and let cool in the pan for about 10 minutes before transferring to a wire rack.
Once cool, slice and enjoy.
