Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup butter, softened
  • 1 cup rolled oats
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamo
  • 2 cups fresh rhubarb, chopped
  • 1 tsp vanilla extract
  • 2 tbsp water

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • In a large mixing bowl, combine flour, granulated sugar, brown sugar, rolled oats, baking powder, salt, and cinnamon. Stir until well blended.
  • Add softened butter to the dry mixture. Mix until crumbly and resembles coarse crumbs.
  • Press half of the crumble mixture into the bottom of the prepared baking dish, creating a firm, even layer.
  • In another bowl, combine chopped rhubarb, vanilla extract, and water. Toss to coat the rhubarb, then spread evenly over the crust layer.
  • Sprinkle the remaining crumble mixture over the rhubarb layer.
  • Bake in the preheated oven for about 30-35 minutes, or until the topping is golden brown and rhubarb is soft.
  • Allow the bars to cool in the baking dish on a wire rack for at least an hour before cutting into squares.

Notes

Fresh rhubarb is preferred; opt for frozen if unavailable. Store leftovers in an airtight container; they last 5-7 days in the fridge.
