  • In a large bowl, combine the grated zucchini and let it sit for about ten minutes.
  • In another bowl, mix together flour, baking powder, salt, black pepper, and any additional herbs or spices you desire.
  • Add the eggs to the zucchini and whisk them together until fully combined.
  • Slowly add the vegetable oil to the egg-zucchini mixture, stirring well to ensure a smooth blend.
  • Fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
  • Gently stir in the grated cheese and any optional nuts or seeds.
  • Pour the batter into the prepared loaf pan, spreading it evenly.
  • Bake for 45-50 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
