Ingredients
  

  • 2 large sweet potatoes, peeled and cubed
  • 1 can (15 oz) canned black beans, drained and rinsed
  • 1 can (14.5 oz) canned diced tomatoes with green chilies
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 cups vegetable broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumi
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish, optional)

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  • Stir in minced garlic and cook for an additional 1–2 minutes.
  • Add cubed sweet potatoes and stir well to combine. Cook for about 5 minutes.
  • Pour in canned diced tomatoes with green chilies, black beans, and vegetable broth. Mix well.
  • Season with chili powder, cumin, smoked paprika, salt, and pepper. Bring to a boil.
  • Reduce heat to a simmer, cover the pot, and cook for 20–30 minutes, or until sweet potatoes are tender.
  • Stir, taste for adjustments, and let rest for a few minutes off the heat.
  • Serve hot, garnished with fresh cilantro if desired.

Notes

For added depth, roast sweet potatoes before adding to the pot. This chili is flexible and delicious with any beans or grains on hand. It tastes even better the next day as the flavors meld.
