  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • ½ cup (100g) brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 ½ cups (315g) all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 tablespoon zest of one lemo
  • 2 tablespoons lemon juice
  • Powdered sugar (for dusting, optional)

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Line two baking sheets with parchment paper.
  • In a large mixing bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy (3-5 minutes).
  • Beat in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • In another bowl, whisk together the all-purpose flour, baking powder, and salt.
  • Gradually add the flour mixture to the wet ingredients, stirring gently until just combined.
  • Fold in the lemon zest and juice.
  • Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Let them rest on the pan for about 5 minutes before transferring to a wire rack to cool completely. Dust with powdered sugar if desired.

Let your butter sit at room temperature for easy creaming. Use fresh lemons for optimal flavor. Don’t overmix your dough to maintain softness. Adjust baking time as needed based on your oven.
