Ingredients
  

  • 2 ½ cups all-purpose flour
  • 1 cup granulated sugar (plus extra for sprinkling)
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 large egg
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons lemon zest
  • 1 ½ cups powdered sugar (for glaze)
  • 2-3 tablespoons milk (for glaze)
  • Food coloring (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a bowl, whisk together the flour, baking powder, and salt.
  • In a separate bowl, beat the softened butter and granulated sugar until light and fluffy.
  • Add the egg, lemon juice, and lemon zest to the butter and sugar mixture; beat until well combined.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Using a cookie scoop or tablespoon, drop dough balls onto a parchment-lined baking sheet about 2 inches apart.
  • Sprinkle a little granulated sugar on top.
  • Bake for 10-12 minutes until edges are lightly golden and centers remain soft.
  • Let the cookies cool on the baking sheet for 1 minute, then transfer to a wire rack to cool completely.
  • To make the glaze, whisk together powdered sugar, 2 tablespoons of milk, and food coloring until smooth.
  • Once cooled, drizzle the pink glaze over each cookie.

Notes

Use room temperature butter and egg for better texture. Don’t overbake; cookies should look slightly underbaked when taken out of the oven. Experiment with different glazes and flavors.
