Ingredients
  

  • 1.5 lbs boneless, skinless chicken thighs
  • 1/3 cup honey
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups jasmine or basmati rice
  • 4 cups water or chicken broth
  • Green onions, sliced for garnish (optional)

Instructions
 

  • Marinate chicken in honey, soy sauce, minced garlic, salt, and pepper for at least 30 minutes.
  • Heat vegetable oil in a large skillet over medium-high heat and cook marinated chicken for about 4-5 minutes on each side until golden brown.
  • Reduce heat to medium, add remaining marinade, and let it bubble for 3-4 minutes until thickened.
  • Rinse rice until water runs clear, then bring water or broth to a boil in a separate pot.
  • Add rinsed rice, cover, and simmer on low heat for 15 minutes until liquid is absorbed.
  • Fluff the rice with a fork, serve chicken over rice with sauce, and garnish with green onions.

Notes

Prep ahead by marinating chicken the night before. Ensure chicken reaches 165°F for doneness. Adjust sweetness by reducing honey or adding vinegar.
