Ingredients
  

Cookie Base

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract

Cheesecake Filling

  • 8 oz cream cheese softened
  • 1/4 cup sour cream
  • 1 cup fresh strawberries sliced

Instructions
 

  • Preheat oven to 350°F (175°C) and prepare a greased or parchment-lined 9x13-inch baking dish.
  • Cream together butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the eggs one at a time, then add the vanilla extract.
  • Whisk together flour, baking powder, baking soda, and salt, then mix into the wet ingredients until just combined.
  • Press two-thirds of the cookie dough evenly into the prepared baking dish.
  • Beat the cream cheese until smooth, then mix in the sour cream. Spread evenly over the cookie base.
  • Scatter the sliced strawberries evenly over the cheesecake layer.
  • Crumble the remaining cookie dough over the strawberries.
  • Bake for 30-35 minutes until golden brown and set.
  • Cool for at least 30 minutes before slicing into bars and serving.

Notes

Store in an airtight container in the refrigerator for up to 5 days or freeze individual bars for up to 3 months. Serve chilled or slightly warmed.
