Ingredients
  

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup strawberries, diced
  • 8 ounces cream cheese
  • 1/4 cup powdered sugar
  • 1/2 cup additional strawberries for topping

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Line a muffin tin with paper liners or spray with nonstick spray.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • In another bowl, whisk the eggs, milk, vegetable oil, and vanilla extract.
  • Pour the wet mixture into the dry ingredients and mix until combined.
  • Fold in the diced strawberries.
  • In a separate bowl, beat together the cream cheese and powdered sugar.
  • Spoon muffin batter into the tin, add cheesecake filling, and top with more batter.
  • Bake for 18-20 minutes until golden brown and a toothpick comes out clean.
  • Cool in the pan for 5-10 minutes before transferring to a wire rack.

Use room temperature ingredients for a smoother batter n Don't overmix to keep muffins fluffy n Experiment with fillings and toppings if desired.
