  • 1/2 cup unsalted butter (softened)
  • 1 cup granulated sugar (divided)
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 ounces Philadelphia cream cheese (softened)
  • 1 1/2 cups fresh strawberries (sliced)

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine softened butter, 1/2 cup of sugar, flour, and salt. Mix until crumbly and add baking powder.
  • Lightly grease a baking dish and press the mixture into the bottom to form an even layer.
  • Bake the crust for 15 minutes until lightly golden. Let it cool.
  • In a separate bowl, beat the cream cheese, remaining sugar, eggs, and vanilla extract until smooth.
  • Gently fold in the sliced strawberries into the cream cheese mixture.
  • Pour the cream cheese filling over the cooled crust, spreading it evenly. Bake for about 25-30 minutes until set.
  • Allow them to cool to room temperature before slicing.

Notes

Always choose fresh, ripe strawberries for the best flavor. You can use different fruits based on what's in season. To make them vegan, use dairy-free cream cheese and plant-based butter.
