Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1 cup fresh strawberries, diced
  • 1/4 cup powdered sugar

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a medium saucepan, melt the butter with 1/2 cup of water over medium heat and add sugar until it boils. Remove from heat and mix in flour until a dough forms.
  • Let the mixture cool, then add eggs one at a time, mixing well after each.
  • Scoop tablespoon-sized portions onto a parchment-lined baking sheet and bake for about 20 minutes or until puffed and golden.
  • Whip heavy cream until soft peaks form, mix in powdered sugar, and fold in diced strawberries.
  • Once cookies are cool, slice the tops off, fill with the strawberry cream mixture, and replace the tops.
  • Chill in the refrigerator for 30 minutes before serving.

Notes

Ensure butter is room temperature for better mixing. Use fresh strawberries for the filling. Chilling enhances texture and flavor.
