Ingredients
  

  • 1/2 cup unsalted butter
  • 1 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh strawberries, diced (or frozen)
  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1-2 tablespoons milk

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Grease an 8x8-inch baking pan with butter or line it with parchment paper.
  • In a medium saucepan over low heat, melt the unsalted butter and let it cool slightly.
  • Add the brown sugar and granulated sugar to the melted butter and whisk until well combined. Stir in the vanilla extract.
  • Crack the eggs into the mixture and whisk until fully incorporated.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet ingredients and stir gently until just combined.
  • Fold in the diced strawberries.
  • Pour the batter into the prepared pan and smooth the top with a spatula.
  • Bake for 25-30 minutes until the edges are golden brown and the center is slightly soft.
  • Allow to cool in the pan on a wire rack.
  • Beat the softened cream cheese, powdered sugar, and milk until smooth and creamy.
  • Spread the cream cheese mixture over the cooled blondies, cut into square bars, and serve.

Notes

Make sure your butter isn’t too hot when adding the sugars. Choose ripe strawberries for the best flavor. Check the blondies a few minutes before the minimum baking time for a moist center.
