Ingredients
  

  • 2 cups fresh strawberries, hulled and chopped
  • ¾ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 cup oats (old-fashioned)
  • 1 cup all-purpose flour
  • ½ cup brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Grease an 8-inch square baking dish with butter or line with parchment paper.
  • In a medium bowl, combine chopped strawberries, ¼ cup of granulated sugar, and lemon juice. Stir gently and let sit.
  • In a large bowl, whisk together oats, flour, brown sugar, baking powder, and salt.
  • Pour in the melted butter and vanilla extract. Mix until crumbly.
  • Press two-thirds of the crumb mixture into the bottom of the prepared baking dish.
  • Spread the strawberry filling evenly over the crumb base.
  • Crumble the remaining oat mixture over the strawberry filling.
  • Bake for 30-35 minutes until the top is golden brown and filling is bubbling.
  • Allow to cool in the pan for 10 minutes, then transfer to a wire rack.

Notes

Store in an airtight container at room temperature for up to three days. You can freeze them for up to three months.
