  • Preheat your oven to 350°F (175°C).
  • Grease a 9-inch square baking pan or line it with parchment paper.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  • In another bowl, whisk the buttermilk, oil, and egg until well blended.
  • Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  • Fold in the chopped strawberries gently.
  • In a small bowl, mix together the brown sugar, melted butter, cinnamon, and a pinch of salt. Add in the flour until crumbly.
  • Spread the batter evenly into your prepared pan and sprinkle the crumble mixture over the top.
  • Bake for approximately 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for at least 10 minutes before transferring it to a wire rack.
