Ingredients
  

  • 1 cup fresh strawberries, pureed
  • 2 tablespoons lemon zest
  • 2 tablespoons lemon juice
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • Powdered sugar for rolling

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Line a baking sheet with parchment paper.
  • In a large mixing bowl, combine strawberry puree, lemon zest, lemon juice, granulated sugar, and eggs. Whisk until smooth.
  • In another bowl, whisk together flour, baking powder, and salt.
  • Slowly add the dry mixture to the wet ingredients, stirring gently until just combined.
  • Cover the bowl with plastic wrap and chill the dough in the refrigerator for about 30 minutes.
  • Once chilled, form balls of dough, roll in powdered sugar, and place on the prepared baking sheet.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Use fresh strawberries for best flavor. Chill the dough to maintain cookie shape. Store in an airtight container at room temperature for up to one week.
