Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup old-fashioned oats
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup unsalted butter (softened)
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup fresh strawberries (chopped)
  • ½ cup chocolate chips (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a large mixing bowl, whisk together the flour, oats, baking soda, and salt.
  • In another bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the egg and vanilla extract to the butter mixture, mixing until well combined.
  • Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  • Fold the chopped strawberries (and chocolate chips, if using) into the dough.
  • Drop mounds of dough onto the prepared baking sheets about 2 inches apart.
  • Bake for 12-15 minutes or until the edges are golden brown.
  • Allow to cool for 5 minutes before transferring the cookies to a wire rack to cool completely.

Notes

Ensure your butter is at room temperature for easier creaming.
Use fresh strawberries and pat them dry before chopping.
Consider chilling the dough for thicker cookies.
