Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 cup sliced fresh strawberries
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1-2 tablespoons milk (as needed)

Instructions
 

  • Wash and slice the fresh strawberries. Mash them slightly to release juices and set aside.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and powdered sugar until fluffy and pale.
  • Stir in the vanilla extract and salt.
  • Gradually add in the flour, mixing gently until just combined.
  • Fold in the strawberries carefully to avoid mashing them.
  • Wrap the dough in plastic wrap and chill in the refrigerator for 30 minutes.
  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Scoop tablespoon-sized portions of dough, roll into balls, and place on the baking sheet.
  • Bake for 10-12 minutes or until the edges are lightly golden. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Using room-temperature butter makes for easier mixing and a smoother dough. You can make the dough ahead and freeze it. For extra flavor, consider using flavored extracts.
