Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups sugar
  • ½ cup unsalted butter (softened)
  • 3 large eggs
  • 1 cup milk
  • 2 teaspoons baking powder
  • 2 teaspoons vanilla extract
  • 1 ½ cups fresh strawberries (chopped)
  • ½ teaspoon salt

Instructions

  • Preheat your oven to 350°F (175°C).
  • Grease and flour two 9-inch round cake pans.
  • In a large mixing bowl, whisk together the flour, baking powder, and salt.
  • In another bowl, cream together the softened butter and sugar until light and fluffy, about 3-5 minutes.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • Gradually add the dry mixture to the wet mix, alternating with the milk, and stir until just combined.
  • Gently fold in the chopped strawberries with a spatula.
  • Divide the batter between the prepared pans and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack.
  • Once completely cooled, frost with your favorite vanilla buttercream or a light whipped cream.

Notes

Use room temperature ingredients. Be careful not to overmix the batter. Consider freezing strawberries for shape retention. Let cake sit for a few hours or overnight for enhanced flavor.
