Ingredients
  

  • 1 cup fresh strawberries, pureed
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1 tablespoon vanilla extract
  • 2 large eggs
  • 1 cup powdered sugar (for coating)

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Wash and hull 1 cup of fresh strawberries, then puree them in a blender or food processor. Measure out the puree and set aside.
  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In a large bowl, beat the softened butter and sugar until light and fluffy, about 2-3 minutes.
  • Add the eggs one at a time, followed by the vanilla extract.
  • Gradually add the dry ingredients to the wet mixture, folding in until just combined.
  • Gently fold in the strawberry puree.
  • Drop large spoonfuls of cookie dough onto a lined baking sheet, leaving space between each cookie.
  • Roll each cookie ball in powdered sugar until well coated.
  • Bake for 10-12 minutes or until puffed and the edges are lightly golden. Let cool before transferring to a wire rack.

Notes

Ensure butter is softened for even mixing. Chilling the dough helps create thicker cookies. Don't skip the powdered sugar coating for the crinkle effect.
