  • 1/2 tsp baking soda

  • 1 cup plain yogurt
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, chopped
  • Powdered sugar (for dusting, optional)

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Grease a 9x9-inch baking pan or line it with parchment paper.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, combine the yogurt, eggs, vegetable oil, and vanilla extract, whisking until smooth.
  • Gradually add the wet mixture to the dry mixture, stirring gently until just combined.
  • Fold in the chopped strawberries gently.
  • Pour the batter into the prepared pan and bake for about 30-35 minutes, or until a toothpick comes out clean.
  • Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Dust with powdered sugar if desired and serve.

Notes
