Summer Berry and Peach Cheesecake

Ingredients
  

  • 1 ½ cups graham cracker crumbs
  • 1 cup granulated sugar, divided
  • ½ cup unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup sour cream
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 2 cups fresh peaches, diced
  • 2 cups mixed berries (strawberries, blueberries, raspberries)

Instructions
 

  • Preheat your oven to 325°F (163°C). Prepare a 9-inch springform pan by lightly greasing it and lining the bottom with parchment paper.
  • In a medium bowl, combine the graham cracker crumbs, ½ cup of granulated sugar, and melted butter. Mix until the crumbs resemble wet sand.
  • Press the mixture firmly into the bottom of the prepared springform pan. Bake for about 10 minutes until set and lightly golden. Remove from the oven and let it cool.
  • In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the remaining ½ cup of sugar and continue to beat until combined.
  • Add the sour cream, eggs, and vanilla extract. Beat on low speed until just combined.
  • Fold in the diced peaches and mixed berries gently with a spatula.
  • Pour the cheesecake filling over the prepared crust in the springform pan, spreading it evenly with a spatula.
  • Bake in the preheated oven for 55-60 minutes until the edges look firm and the center has a slight jiggle.
  • Turn off the oven and crack the door to cool the cheesecake gradually for about an hour before transferring it to the refrigerator.
  • Chill the cheesecake for at least 4 hours, preferably overnight, before removing it from the springform pan.

Notes

Always use room temperature ingredients for smoother batter. Press crust firmly to prevent crumbling. Use a water bath for baking if desired. Cool slowly to avoid cracks. Top with fresh fruit or whipped cream for presentation.
