Ingredients
  

  • 4 cups chopped cucumbers
  • 1 cup finely chopped onio
  • 1 cup finely chopped bell pepper
  • 2 cups apple cider vinegar
  • 1 cup granulated sugar
  • 1 tablespoon salt
  • 1 tablespoon mustard seeds
  • 1 tablespoon celery seeds
  • 1 teaspoon red pepper flakes (adjust to taste)

Instructions
 

  • Prepare cucumbers by washing and chopping them into small pieces.
  • In a large bowl, combine cucumbers, onion, and bell pepper. Sprinkle with salt and let sit for 2 hours.
  • Drain and rinse the vegetables under cold water.
  • In a large saucepan, combine apple cider vinegar, sugar, mustard seeds, celery seeds, and red pepper flakes. Bring to a boil.
  • Add drained vegetables to the saucepan and stir well.
  • Reduce heat and simmer for 10-15 minutes.
  • Prepare jars for canning by sterilizing them.
  • Pour hot relish into prepared jars, leaving ½ inch headspace. Wipe rims clean.
  • Seal jars with sterilized lids and metal bands, tighten until fingertip-tight.
  • Process jars in a boiling water bath for 10 minutes.
  • Allow jars to cool completely and check seals. Store in a cool, dark place.

Notes

Prep ahead for convenience. Consider adding fresh herbs or different peppers for unique flavors. Store in a cool, dark place for up to a year.
