Ingredients
  

  • 2 pounds boneless, skinless chicken thighs
  • 20 ounces pineapple chunks (canned or fresh)
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 4 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 1/4 cup green onions, chopped
  • 1 red bell pepper, sliced
  • 1 tablespoon sesame seeds (optional for garnish)

Instructions
 

  • Place the boneless, skinless chicken thighs in the bottom of the crockpot, spreading them evenly.
  • In a mixing bowl, combine the low-sodium soy sauce, brown sugar, minced garlic, and grated ginger, stirring until the sugar dissolves.
  • Pour the sauce mixture over the chicken thighs, ensuring they are well-coated.
  • Add the pineapple chunks and sliced red bell pepper on top of the chicken.
  • Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours.
  • Once cooked, shred the chicken with two forks right in the crockpot or remove it and shred it on a cutting board.
  • Stir the shredded chicken back into the sauce to absorb more flavor.
  • Before serving, garnish with chopped green onions and sesame seeds if desired.
  • Pair with rice or noodles to soak up the savory sauce.

Notes

Prep ahead by chopping vegetables the night before. Adjust sweetness as desired. Use fresh pineapple for better taste. Leftovers can be stored in airtight containers.
